Maguro Kaitai (Tuna Cut) Show/まぐろ解体ショー

Today, I went to the Minami Uonuma Ichiba Matsuri (Market Festival).
今日は南魚沼市場まつりに行って来ました。

Many events were held there, but for me, the main event was the Maguro Kaitai (Tuna Cut) Show.
多くのイベントが行われますが、私にとってのメインイベントはまぐろ解体ショーです。

I later learned in the show that this tuna was a bigeye tuna, and weighed 71 kg.
後でショーで分かったことですが、このまぐろはメバチマグロで、重さは71キロだそうです。

Other tunas were already cut, and were ready for auctions.
他のまぐろ(マグロ、鮪)はすでに解体され、競り用に置かれていました。

One head and two kama (collars):
頭一つとかま2つ;


I took some videos of the show. Sorry for the poor quality of the videos. I only have a digital camera, and I had to take videos with my right hand only in a crowd. I had a bag in my left hand.
ショーをビデオに撮りました。ビデオの質が悪くてすみません。デジカメしか持っておらず、それに混雑の中、右手だけでビデオを撮影したので。左手には袋を持っていました。

The show began at 9:30, and this big guy cut off the fins first (not taken in the video) and then the head. He then started at the back side, cutting off a big fillet.
ショーは9:30に始まり、大男がまずヒレ(ひれ、鰭)(ビデオには写っていません)を切り落とし、次に頭を切り落としました。次に背中から始め、大きな切り身を切り落としました。


Another person is scrapping off the flesh from the backbone. Such flesh is called nakaochi. Nakaochi actually means backbone, but it usually means the flesh on it.
別の人が中骨から身を取っています。このような身を中落ちと言います。中落ちとは実際は中骨(背骨)のことですが、通常、中骨についた身を指します。


The big guy then cuts off one kama (collar). Such a fatty kama is called kama-toro.
次に、大男がカマを切り落とします。このような脂がのったカマはカマトロと言います。


He shows the audience a fatty part and says, "Mechakucha umai!" (absolutely delicious).
トロの部分を観客に見せて、「めちゃくちゃうまい!」と言っています。


The guy holds the nakaochi (backbone) and says that this is the real nakaochi.
男は中落ちを持って、これが正真正銘、中落ちだと言っています。


The guy cuts off the other kama.
男はもうひとつのカマを切り落とします。


Toward the end of the show. Look at the long knife! It looks like a Japanese sword!
ショーの終わり頃。長い包丁を見て下さい!日本刀のようです。
